Healthy Breakfast Bowl

After having babies and having my appendix removed I am on a mission to lose 40 lbs, which is not an easy task. I am starting my mornings off with my favorite breakfast bowl I started eating 7 years ago when I started CrossFit and got into the best shape of my life. Cereal + yogurt bowls were no longer cutting it when I was trying to reach my health and fitness goals.

I like to prep the bell peppers and the zucchini ahead of time to make it easy to make especially since I seem to always run late. I have a bag of the Sweet Kale Vegetable Salad Kit from Costco to make it easy to add extra veggies to this breakfast.

If I am being honest, it took some time to get out of my old habit of sugar-filled breakfast options, but once I started fueling my body with healthy options in the morning I started craving it for breakfast.
I hope you enjoy this veggie-loaded breakfast bowl as much as I do.

I would like to note I did my best at measuring food. I am the girl that grabs a little of this, dashes a little of that and creates something in the kitchen that usually never tastes the same because I don't write it down. BUT this is pretty close since I make it the same way ALL the time.

Garlic Salt


I swear we keep them in business. But I really do use these two all the time. I get the garlic salt at Costco, and if you are local in Idaho you can usually find John's Seasoning Spice in stores. If you are out of state and want to get it, I would call them and ask. I have friends who have me send this stuff to them because it's that good.

Ingredients

  • Coconut Oil - 2 Bell Peppers Chopped {any color you like}
  • 2 Zucchini Chopped
  • 1 Bag Sweet Kale Vegetable Salad Kit‍
  • Seasonings of choice. I love this one + this one
  • 2 Eggs
  • 1/4 Avocado
  • Hot Sauce
